Bacon Egg and Cheese at home

Quick, delicious, and good for you

It seems like lately there’s a lot of talk about the best Bacon, Egg and Cheese breakfast sandwich. So and so’s corner grocery store has a good one, but, oh my, did you try the one at the little bakery in the village? And on and on.

I tried a lot of them. Then I perfected one at home. In the time it takes to drive to any of the recommended locations, I can whip one up at home and cut out the driving around.

While some will say the cooking method is what really makes a good one, for me it’s the quality of the ingredients that makes a BEC a winner.

I start with bacon I’ve pre-cooked ahead of time. Beeler’s Cherrywood smoked uncured bacon. No BHT or BHA, no nitrates, or nitrites. Just pure clean bacon. I simply cook a package of this at a time and store the leftovers in the fridge, making my way through them over the next few days.

For the egg I use a Wilcox USDA organic egg packed with Omega 3. A slice of Organic Valley sliced provolone or cheddar gets the cheese nod. And two slices of Dave’s Killer Bread thin-sliced Good Seed bread for the bookends.

Ingredients

  • 2 teaspoons ghee
  • 1 Wilcox Omega 3 egg
  • Salt and pepper to taste
  • 1 TBS heavy whipping cream
  • 2 slices of Dave’s Killer Bread thin sliced Good Seed bread
  • 2 slices of Beeler’s Cherrywood Smoked Uncured Bacon

Method

  1. Place ghee into a small non-stick pan and heat to medium. While the pan is heating, in a small bowl, scramble together the egg, salt, pepper, and cream.
  2. Toast bread in a toaster for no more than 2 minutes. While it’s toasting, halve the two slices of bacon. Baste some of the heated ghee onto one side of each slice of the toasted bread.
  3. Pour the egg mixture into the pan and cook until done. While it’s cooking, plate the bread, place the cheese over a slice of bread, add the four halves of bacon on top and toss it in the microwave for 20 seconds to reheat the bacon and slightly melt the cheese.
  4. When the egg mixture is cooked to your liking, place it over the bread and enjoy your sandwich!

Notes

  • You prefer your egg fried? Go for it and skip the cream.
  • Too much bread? Jump down to one slice.
  • Add other goodies like avocado, arugula, tomatoes etc… The world is your oyster.
