Seattle's newest wine bistro

It's hard to believe, but a new wine bistro is opening in Seattle by a most likely, yet unlikely, entrepreneur.

Bryan Arnett, a 21 year-old from Burien, has set his sights on opening up what may well be one of the most unique wine bars ever to open in the Northwest.

At only 21 years of age, Arnett isn't exactly restaurant savvy, but he's got the money and the friends to make it happen.

Back in 2008, Arnett was involved in a serious auto accident that worked out well financially. Previously an employee of McDonald's, Arnett set his sights on investing his payout into a food business. “I always liked working around food and customers, so when the opportunity came up, I just had to put my money here,” says Arnett from his home office in Burien.

Having only just turned 21 years of age, he's not exactly a candidate for being a wine expert "…but I have a lot of friends who like to drink wine and I think between me and them, we can put together a great list of offerings."

While the name may sound a little odd at first, Arnett explains the meaning behind the bistro's marquee – “I was walking through the wine section of a grocery store one day and saw a wine tip placed near the shelves that said all wine should be served at 56 degrees. I'm intrigued with the concept of the six degrees of separation, so I simply put the two together and came up with the 56 degrees of separation. Enjoying wine with friends and discovering new ones and our commonalities is what I want the wine bistro to be all about.”

At just 21, Arnett wants to attract a younger crowd. When completed you can expect to find a row of computers so guests can play video games and check their Facebook pages. Arnett plans to have a few video cameras guests can use to tape each other onsite and upload videos to the web while sipping on a glass of Merlot or Chardonnay.

Food offerings will mostly be tapas and might include chicken bits, a chipotle BBQ angus cheeseburger, truffle fries, assorted cheeses and meats and a few desserty items.

Build out is underway and the bistro is expected to open Saturday, April 31st.
