Lakeside Kitchen + Bar

Water's Table at the Hyatt Regency Lake Washington at Seattle's Southport has been opened just three years; the last six months may have been the most defining for the restaurant.

Menus have changed dramatically with the pandemic dictating whether you're open/closed, doing take out or delivery or both, or having limited guests in the dining areas. It's difficult to have a large or complex menu when your staff is smaller and you have no real idea who will show up. In addition to this, the people behind Water's Table were already looking at gearing the menu more toward what the Renton community was looking for and appreciated. Their current menu reads "Distance Socially, Eat Locally." They're currently working with Gelatiamo, Beecher's, and Grand Central Bakery on the home front. However, the salmon they use is Ōra King, a farmed "ultra-premium" line of farmed King salmon from New Zealand. In trying to keep costs reasonable and consistent for guests, they've gone more distant, less local on the salmon.

While more menu changes are in the works, current offerings include shared plates like Dungeness crab cakes with apple fennel slaw and whole grain aioli, chicken wings with gochujang sauce, and a wild mushroom mac 'n' cheese. There are three salads: heirloom tomato with peppered ricotta, compressed melon salad (three types of melon vacuum sealed with mint so the melon absorbs the flavor), and a romaine that you can add chicken, hanger steak, or salmon to make it your own. Entrees include a burger, fish and chips, steak frites, a pasta, and the salmon. A Meyer lemon cake, warm apple crumble, and gelato are the sweets of the day.

Wine, beer, cider, and handcrafted cocktails are available - "Distance Socially, Drink Locally" rings true with Woodinville bourbon and Crater Lake vodka. Wine and beer come from Washington and Oregon with a few exceptions.

Water's Table covered patio is the place to be these days - open air, heaters if necessary, and the incredible Lake Washington view. There's currently a family of three eagles that flies in front of the restaurant which is always a thrill. Dock + Anchor beer garden is on the dock below the patio and there are plans to add up to 200 seats during the summer season. Tacos and sliders are featured as well as beverages.

Pandemic or not, the Hyatt Regency, Water's Table, and Dock + Anchor are a great local escape. There's a feeling of truly getting away, being treated like a special guest, and eating like you're on vacation - maybe just one more bite of that Meyer lemon cake…
