Braised Brussels Sprouts

Serves 6

Ingredients

1-1/2 pounds Brussels sprouts, trimmed, cut in half, and washed
4 ounces thick cut applewood smoked bacon, small diced
1/4 cup yellow onion, small diced
2 cloves garlic, chopped
1 tbsp fresh thyme
1 cup chicken stock or low sodium broth
Kosher salt
Freshly ground black pepper
3 tbsp white wine vinegar
Olive oil

 

Directions

Add 2 tbsp water to a large skillet and set over medium-high heat. Add bacon and cook until fat renders, about 2-3 minutes. Remove bacon and add Brussels sprouts, onion, garlic, and thyme to the pan with bacon fat. Cook until slightly caramelized. Add stock, vinegar and cooked bacon. Simmer until tender. Season with salt and fresh ground pepper.
