Spicy Green Beans

Serves 2

Ingredients

  1. ¼ lb organic green beans, ends trimmed
  2. ¼ tsp sea salt
  3. ¼ tbsp low sodium soy sauce
  4. ½ tbsp freshly grated or minced organic ginger
  5. 1 organic garlic clove, pressed
  6. ¼ tbsp rice vinegar
  7. ½ tsp organic sugar
  8. ¼ tsp ground pepper
  9. ¼ tbsp water
  10. 1/8 tsp crushed red pepper flakes
  11. Sesame seeds to top

Method

  • Steam green beans for 3 minutes or until they are just undercooked. Put in colander and rinse with cold water. Drain well; set aside.
  • Whisk together all other ingredients except sesame seeds. Put in pan and heat sauce over medium low heat, stirring, about 3 minutes.
  • Add green beans to pan and complete cooking (keep them crisp-tender).
  • Put on serving plate and sprinkle with sesame seeds.

If you like things with more sauce, double ingredients while staying with same amount of green beans.
