Rosemary Black Pepper Flatbread w/Blue Cheese, Grapes, Pork, Honey

Makes one 13" flatbread

Ingredients

  • One 13" organic pizza crust or flatbread
  • Olive oils: rosemary and black pepper OR
  • 2 tsp chopped rosemary and ¼ tsp ground freshly black pepper
  • ½ lb red grapes (1-1/2 cups) halved Coarse sea salt
  • 4 ounces pancetta or prosciutto, cooked and crumbled into small pieces
  • 3 ounces organic blue cheese, crumbled (1/2 cup)
  • 1 tbsp organic honey
  • 1 tbsp organic snipped chives

Our version of this flatbread includes some type of pork to add protein to your meal.

Method

1. Heat oven to 450°.

2. Place crust onto pizza pan or stone.

3. Brush pizza crust with rosemary and black pepper olive oil* or scatter rosemary and ground pepper onto surface of crust.

4. Press grape halves onto crust and bake for about 10-12 minutes or until grapes begin to release some juice.

5. Sprinkle with sea salt.

6. Remove from oven and sprinkle the pork and blue cheese evenly across pizza. Return to oven for about two minutes until cheese melts.

7. Slide pizza onto serving plate and drizzle with honey and sprinkle with chives.

8. Cut into wedges and serve.

Notes

  • We used an organic pizza dough and flattened it to the size we wanted; it would be easier to use a pre-cooked organic crust (you can find at Shoreline's Central Market in the bread area).
  • If using pizza dough, work the rosemary into the dough before rolling out.
  • We tried laying slices of uncooked pancetta on the pizza, but it was a little difficult to eat. Cooking beforehand would ensure you don't overdo the crust and make it less messy to eat. The pancetta was mild; prosciutto might stand up to other flavors a bit better. You might even try salt pork, but the cure is stronger, so you probably want to leave the sea salt off and use less than 4 ounces.
  • We also used whole grapes; halved would be a big improvement.
  • Ours was good when we made it and better the day after.
  • If you want protein but not meat, try walnuts.
  • Keep experimenting!
