Chop Salad

Serves 2

We love doing a chop salad for dinner and you can really clean your refrigerator out - whatever you have in there will probably work!

Ingredients

Dressing

2 tablespoons oregano balsamic*
2 tablespoons basil olive oil*
Sea salt
Freshly ground black pepper

Salad

3 cups chopped romaine
¼ pound sliced pepperoni, chopped
1 medium tomato
¼ cup chopped red onion
¾ cup drained, rinsed, and chopped artichoke hearts
¼ cup chopped black or kalamata olives
½ medium cucumber
1 medium chopped carrot
¼ pound of garbanzo beans
¼ cup feta cheese
Whatever else you've got!

Method

1. Chop all ingredients and throw into a bowl.

2. Whisk together olive oil and balsamic, salt and pepper.

3. Toss together and enjoy.

Notes

1. Swap out pepperoni for other meats: salami, chicken, steak, pork.

2. Swap out cheese: try blue cheese or mozzarella.

*These olive oils can be found at A Bit of Taste on top of Queen Anne hill.
