Tom's Off Broadview Chop Salad

Serves 2

Seattle used to boast a small pizza joint on Capitol Hill called Bill's Off Broadway. Bill's was lost during the pandemic. While it was popular for its pizza, I went for the chop salad. While not true to the original Bill's, this workup is inspired with many of the same ingredients as well as preparation. The biggest difference being that when I make mine, I use 100% organic ingredients.

Ingredients

  • 2 oz Pepperoni slices, sliced 1" x ¼"
  • 2 oz Black Forest ham slices, sliced 1" x ¼"
  • 4 slices Swiss or mozzarella cheese, sliced 1" x ¼"
  • ¼ cup sliced black olives
  • ¼ cup sun dried tomatoes, chopped fine
  • 2 TBS extra virgin olive oil
  • 2 TBS red wine or balsamic vinegar
  • 2 handfuls of the lettuce of your choice. I use a mix of kale and spinach.
  • Salt and pepper to taste

Method

1. Combine all the ingredients in a large bowl and blend together with tongs until all the lettuce is coated in the oil/balsamic mixture, then serve.

Notes

  • Applegate is my go to brand for the meats. For the cheese I use Organic Valley. PCC and Sprouts have most of the ingredients on hand organically at most times.
  • Expand more on a good thing by adding garbanzo beans, sliced onions, carrots, pepper and/or whatever else floats your boat.
