Chicken, Bacon, and Fruit Green Salad

Filling yet refreshing salad that takes advantage of summer fruit. Mix and match fruits and dressing.

Ingredients

Salad

  • ½ lb brined, cooked chicken breast (we brined, used black pepper while pan-frying, then chopped)
    4 strips cooked bacon, chopped
    ¼ cup cashews, chopped (or nut of your choice)
    1 cup strawberries, roughly chopped
    ½ cup blueberries
    ¼ cup blue cheese, crumbled
    2 handfuls of lettuce (your preference, we used a blend of kale and arugula)

Dressing

  • 2.5 tbsp Blood Orange EVOO
    2.5 tbsp Peach Balsamic
    Salt and freshly ground black pepper

Method

  1. Brine (several hours), season, cook, chop chicken.
  2. Cook and chop bacon.
  3. Chop nuts and strawberries and place in large bowl with blueberries and blue cheese. Add greens.
  4. Whisk together EVOO and balsamic, salt, and pepper. Pour over salad in bowl and toss.

Notes

  1. This is such a flexible salad. Switch up fruits, nuts, and dressing to keep the variety going.
  2. We encourage people to use organic ingredients for better flavor and health benefits.
