Fig and Honey Caramelized Red Onions

Caramelized onions are so good, and they add depth to dishes. Adding fig jam and honey adds sweetness and flavor to the onion.

Ingredients

  • 1 large red onion
  • 1 tbsp organic avocado or extra light olive oil
  • 1 tsp salt
  • 1 tbsp Stonewall Kitchen Organic Classic Fig Jam
  • 2 tsp honey

Method

  1. Using a mandoline, slice the red onion into very thin rings, directly into a pan.
  2. Add avocado or olive oil to pan and heat over medium heat. Stir onions and oil together to coat onions, then spread onions in evenly in pan.
  3. After 10 minutes, add the salt, fig jam, and honey to the pan.
  4. Stir the onions every few minutes for 30 minutes or longer, lowering the heat if needed. Occasionally scrape any brown bits from the bottom of the pan to incorporate them into onions.

These are great on burgers, steak, pizza, tarts - so many things. Make extra and keep in refrigerator for up to a week.
