Easy Barbecue Chicken Sandwiches

Serves 2

Sometimes you want something easy and tasty. This is it!

Ingredients

  • 2 small or 1 large chicken breast
  • ¼ cup apple cider vinegar
  • ¾ cup water
  • 2 tsp black peppercorns (or you can use a peppercorn blend)
  • 1 tbsp kosher salt
  • O Organics Sweet & Spicy BBQ Sauce
  • 4 slices of Dave's Killer Bread (your choice, we like Thin-Sliced 21 Whole Grains and Seeds)

Method

  1. Brine chicken breast in apple cider vinegar/water/peppercorn/salt mixture for at least 2 hours.
  2. Rinse chicken and place in oven-proof pan. You can grind some pepper over the breast(s) if you wish.
  3. Roast chicken in oven until it reaches an internal temperature of 165 degrees F.
  4. Spread the Dave's Killer Bread with a little O Organics BBQ Sauce, place chicken on top and enjoy. We like to have some sauce on the side to dip into as well.
