Scrambled Eggs with Feta and Dill

Ingredients

  • 2 organic eggs
  • Salt substitute, to taste
  • 1/2 tbsp Black Pepper EVOO
  • 1 tbsp red onion, minced
  • Splash of A-Premium White Balsamic
  • 2 tbsp feta cheese, chopped or crumbled
  • Fresh dill to sprinkle over cooked eggs

Method

  1. In small bowl, mix eggs and salt substitute, set aside.
  2. Put Black Pepper EVOO in pan and bring to medium heat. Add red onion and sauté until tender. Add egg mixture and white balsamic.
  3. When eggs are almost completely cooked, add feta cheese to pan. When warmed and incorporated, plate eggs. Sprinkle fresh dill over eggs and serve.
