Beyond Parfait

Serves 1

Parfaits are a quick way to create a breakfast dish when you're on the go. But if you have a few minutes more, you might create a far more magical entrée!

Ingredients

  • ¼ cup plain Greek yogurt
  • ¼ cup whole oats
  • ¼ cup chopped apple
  • ¼ cup fresh or frozen blueberries
  • 1 TBS fruit infused balsamic vinegar
  • ¼ tsp sweet spice blend (separate recipe below)

Method

  1. Place all the ingredients into a small food processor and pulse until mixed (it should have texture). Pour it all into a bowl and enjoy.

Notes

  • For better flavor and better health, use as many organic ingredients as you can get your hands on.
  • Fruit infused balsamic vinegars are found at better grocery stores and in a wider variety at an olive oil specialty store.
  • Experiment with other fruits like strawberries, raspberries, and cherries.

Sweet Spice Blend

This spice blend works well over ice cream, in coffee drinks, and in parfaits.

Ingredients

  • 1 TBS ground cardamon
  • 1 TBS ground cinnamon
  • 1 TBS ground ginger
  • 1 TBS ground turmeric

Method

  1. Combine all the spices together and blend well

Notes

  • For better flavor and better health, use as many organic ingredients as you can get your hands on.
  • Store the spice blend with your other spices for up to 6 months.
