Peach Bruschetta

This combination of flavors totally appeals, yet the nice part of this recipe is you can swap out various ingredients (EVOO flavor, herb, cheese, bread) and make something new each time.

Serves 2 (but great for a crowd, so increase at will)

Ingredients

  • 4 slices nice bread, like Grand Central Como or Essential Bakery Organic Columbia Bread)
  • 1-1/2 tbsp Basil EVOO, plus 1 tsp (we use A Bit of Taste oils)
  • 1 large peach, small dice
  • 2 tbsp chopped fresh mint
  • 1/8 tsp kosher salt
  • 2 tbsp honey
  • ½ tsp apple cider vinegar
  • ½ tsp hot sauce or to taste
  • 4 tbsp soft blue cheese

Method

  1. Preheat oven to 350° F.
  2. Lay the bread on a baking sheet and brush both sides with Basil EVOO. Bake until golden brown, about 13-15 minutes (keep an eye on it, you don't want to get it too crisp).
  3. In a bowl, toss the peaches, mint, salt, and 1 tsp Basil EVOO together.
  4. In a small bowl, whisk together honey, vinegar, and hot sauce.
  5. To create the bruschetta, spread a tbsp of blue cheese on each slice of bread. Place peaches and mint on top, then drizzle it all with the hot honey.
  6. Serve immediately.
