Cannellini Bean and Herb Dip

Ingredients

  • ¼ cup Picual or Hojiblanca EVOO + extra for drizzling
  • 3 large organic garlic cloves, pressed
  • 1 tbsp fresh organic thyme, finely chopped
  • 1 tbsp fresh organic rosemary, finely chopped
  • 2 cans organic cannellini beans, drained and rinsed well
  • 2 tbsp balsamic-your choice (oregano white balsamic, red wine vinegar, etc.)
  • Salt and pepper to taste
  • Toppings of choice: pine nuts, red pepper flakes, fresh thyme, etc.

Method

  1. Heat olive oil in a pan over medium heat. Add garlic thyme, and rosemary. Sauté 2-3 minutes or until garlic is fragrant and begins to soften.
  2. Place the above in a food processor and add beans, salt, pepper, and balsamic. Blend on high until you have a smooth and creamy consistency. Taste to adjust seasonings.
  3. If you are making ahead, place in bowl and refrigerate for at least an hour. To serve, warm if you want and drizzle olive oil over the top and add any toppings of choice. Serve with bread (toasted or not), and fresh veggies.
