The Cookbook

Edible Communities, Inc., a publishing and information services company, creates local-foods publications in distinct culinary regions throughout the US and Canada. They are now a network of 70 award-winning magazines. Jill Lightner has been the editor of Edible Seattle since its inception in 2008, and has been a food writer for over 10 years. She has now edited the edible Seattle cookbook which includes her own recipes as well as those from Puget Sound restaurants and local writers.

With over 100 recipes using local ingredients, it was tough to choose which two we wanted to share with our readers. Jill's Saag Paneer, and Allium Restaurant's Creamy Polenta with Roasted Forest Mushrooms caught our attention. But it might just be best if you got your own copy, which you can do by clicking here.
