Strictly regulated by state conservation requirements, California spiny lobsters are a rare find at seafood restaurants, even in peak season. Water Grill leverages nearly 80 years of relationships with local lobstermen to offer some of the highest-quality, responsibly sourced spiny lobsters. Unlike other lobster varieties, California spiny lobsters don’t have claws, which contributes to their sweeter flavor, firmer texture, and overall meatier product. At Water Grill, guests can enjoy this seafood delicacy charcoal-grilled with a side of house-made coleslaw.
