CrabFest 2023


Chicken and Orange Salad

Serves 2


  • 2 large handfuls of lettuce (we used organic 50% spring mix/50% spinach)
  • 2-3 tbsp cheese of your choice (we used feta)
  • 2 tbsp finely chopped sweet onion
  • 1 Navel orange, sectioned, then cut into bite-sized pieces
  • 2 tbsp sliced almonds, toasted
  • 6 oz thick carved oven roasted chicken breast*
  • 2 tbsp extra virgin olive oil of your choice**
  • 2 tbsp of Key Lime white balsamic vinegar**
  • Salt & freshly ground pepper


  1. Place lettuce, cheese, onion, orange, and almonds in bowl.
  2. Whisk together oil and balsamic, adding salt and pepper to taste. Drizzle over salad and toss to incorporate.
  3. Top with slices of chicken and serve.

*Loving true story organic; finding it at larger PCC stores, sometimes at the smaller stores.

**We use oils and balsamic vinegars from A Bit of Taste in Snohomish.
