Maple Bacon Almond Butter Sandwich

Serves 2

Peanut butter and bacon sandwich. Kids from 2-92 love them. If you use typical bacon, jarred peanut butter and white bread there's not much happening in the health or the flavor departments. But let's inject a little magic into this old standard. Ours is an ultra-healthy alternative using pure almond butter (no sugar added), organic bacon and thin sliced organic bread. Add a sliced apple or orange and you've got lunch, in about 5 minutes.


  • 4-6 slices organic bacon
  • 1 TBS organic Maple Syrup
  • 4 slices of Dave's Killer Bread, thin sliced
  • ¼ cup organic almond butter


1. Lay the bacon out on a paper towel. Put the maple syrup in a ramekin and brush each slice on one side with the maple syrup. Place the bacon into a skillet, or the microwave, and cook to your desired doneness. Drain on new paper towels.

2. Toast the Dave's killer bread slices lightly in a toaster. Remove and spread a tablespoon of almond butter on each slice. Cut the bacon slices in half and layer them onto the bread. Bring each sandwich together and serve.


  • Organic bacon can be found locally at PCC, Central Market, Ballard Market, Whole Foods, and better grocers. Look for the Applegate "Organics" label (not "Naturals").
  • Stores with large bulk sections like PCC and Whole Foods have grinding machines filled with fresh almonds. Grab a container nearby, press the button and grind away.
  • No reason why you can't add in a few paper-thin apple slices as an addition. Use a cheese slicer for this.
