Aerlume, New Restaurant in the Marketplace Building

Fire & Vine Hospitality has more in the works! This property is a 5,500 square foot restaurant with a private courtyard and fire pit overlooking Elliott Bay. Sliding glass windows/doors open onto outdoor covered seats. The view never ends. On entering, you'll find the bar to the left and an open kitchen to the right. The counter in front is a great demo area. Whether or not counter seats will go in is still being decided. The main dining room is in the center of the space with rooms to each side that can be used for regular dining or private dining when glass doors pivot to close. All three areas can open to the outside. An area just before the main dining room will have a fire table. Groups of 16-20 can book it, or smaller groups of four can snag the corners and enjoy drinks and small plates.

"We may do some fun things with retail wine," says Chad Mackay. "We've always wanted to have a retail wine program, but with our restaurants only open at night, they didn't lend themselves to the idea. We're looking at farm/ranch house urban reclamation to use for furniture and retail display. With the amount of wine we buy for all our properties, we get some great deals. We're thinking about the concept at this restaurant of the wine program rotating the deals we get."

They are also tied into a couple of farms: Sound Sustainable Farms run by Cedar Grove and Fall City Farms. "Fall City is growing a lot of things for us and is run by a local family. We're toying with the idea of doing a little CSA where people could pick up their produce on the way home from work. The menu will be veggie driven with protein being a supporting player. Seafood will be on the menu but not a focus as we're next door to Cutter's. And we'll be offering some offset cuts of steak. With El Gaucho so close, we can buy larger sides of cattle from Neiman Ranch. There won't be waste as we have so many places to use it."

They're looking at a summer 2018 opening.
