Pike Market Charm


Easy green bean side dish/salad

Serves 2


1 tbsp basil olive oil*
1 tbsp oregano white balsamic vinegar*
1 clove organic garlic, pressed or minced
Kosher salt
Freshly ground pepper
¼ lb. organic green beans, trimmed
4 ounces organic crumbled feta
¼ cup organic mint leaves, roughly chopped
¼ cup organic red onion, thinly sliced


Whisk together olive oil, vinegar, garlic, salt, and pepper in large bowl.

Bring salted water to boil and add beans. Cook until tender, 2-3 minutes. Drain beans, rinsing in cold water to stop cooking.

Toss beans in bowl with dressing. Add feta, mint, and onion, mix together.

*We get basil oil and oregano vinegar from A Bit of Taste on Queen Anne Ave.
